Yummy Squash Casserole

- 3 to 4 summer squash, thinly sliced
- 1/4 c. onion, chopped or sliced
- 2 Tbsp. butter or margarine
- 1 egg, slightly beaten
- 1 c. Cheddar cheese, shredded
- 1/2 c. milk
- 6 Tbsp. butter or margarine
- 20 to 24 crackers, rolled into crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Saute squash and onions in 2 tablespoons butter until soft. Mix egg, cheese, milk, 6 tablespoons butter, salt, pepper and 1/3 cracker crumbs in greased casserole dish.

2Gently add sauteed mixture and cover with remaining cracker crumbs.

3Bake at 350° for 40 minutes.

4If top gets too brown, cover lightly with foil.
