- 1 1/2 lb. carrots, sliced 1/4-inch thick
- 1 Tbsp. prepared horseradish
- 3/4 tsp. lemon pepper
- 1 c. soft bread crumbs
- 2 Tbsp. grated onion with juice
- 1/2 c. mayonnaise or yogurt
- 1/4 c. grated Cheddar cheese
- paprika
Directions

1Cook carrots in a small amount of water for 5 minutes.

2Drain, reserving 1/4 cup of the water for sauce.

3Combine onion with juice, horseradish, mayonnaise, lemon pepper and reserved water. Put carrots in a 2-quart buttered casserole.

4Cover with sauce. Top with a mixture of cheese and bread crumbs and sprinkle with paprika.

5Bake at 350° for 20 minutes.
