Ingredients

  • 1 (2 1/2 oz.) jar mushrooms
  • 1 1/2 c. cauliflowerets
  • 1 c. broccoli flowerets
  • 1 c. celery, cut into 2-inch strips (about 2 stalks)
  • 3/4 c. tarragon vinegar
  • 1/3 c. oil
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • dash of pepper

Directions

    Drain the mushrooms and reserve the liquid.

    Add enough water to liquid to make 1 cup.

    In large skillet, combine all ingredients.

    Bring to a boil, stirring occasionally.

    Simmer about 5 minutes.

    Cool and refrigerate in a tightly covered bowl for at least 24 hours.
