  • 2 medium zucchini
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 1/2 tsp. dill
  • 1 (4 oz.) block tofu, drained
  • 1 1/2 Tbsp. chicken style seasoning
  • 1 Tbsp. poultry seasoning

Directions

    Slice zucchini lengthwise and hone out insides to resemble canoes.

    Saute the insides with onion and garlic in a little water.
  3. 3
    Scramble the tofu and seasonings like eggs.
  4. 4
    Mix together with the zucchini-onion mixture and fill the inside of the zucchini halves.
  5. 5
    Arrange zucchini halves in a baking dish with extra filling around them and bake at 350° for 30 minutes.
