- 4 c. zucchini (unpared), thinly sliced
- 1 1/8 c. Bisquick baking mix
- 1/2 c. Parmesan or Monterey Jack cheese, grated
- 1/2 c. onion, chopped
- 2 Tbsp. parsley flakes
- 1/2 tsp. salt
- dash of black pepper
- 1/2 tsp. oregano leaves
- 1 clove garlic, finely chopped
- 1/4 c. vegetable oil
- 4 eggs, slightly beaten
Directions

1Mix all ingredients well; spread mixture in a greased rectangular pan (13 x 9 x 2-inch).

2Bake at 350° for 35 to 40 minutes, until golden brown.

3Cut into rectangles about 2 x 1-inch.

4Refrigerate remaining appetizers; reheat when serving remainder.
