  • 4 c. zucchini (unpared), thinly sliced
  • 1 1/8 c. Bisquick baking mix
  • 1/2 c. Parmesan or Monterey Jack cheese, grated
  • 1/2 c. onion, chopped
  • 2 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • dash of black pepper
  • 1/2 tsp. oregano leaves
  • 1 clove garlic, finely chopped
  • 1/4 c. vegetable oil
  • 4 eggs, slightly beaten

Directions

    Mix all ingredients well; spread mixture in a greased rectangular pan (13 x 9 x 2-inch).

    Bake at 350° for 35 to 40 minutes, until golden brown.

    Cut into rectangles about 2 x 1-inch.

    Refrigerate remaining appetizers; reheat when serving remainder.
