- 1/2 tsp. salt
- 3 eggs
- 3 Tbsp. all-purpose flour
- 1/4 c. grated Parmesan cheese
- 1 clove garlic, minced or pressed
- 3/4 tsp. oregano leaves
- 1/8 tsp. pepper
- 1/4 c. each finely chopped parsley and sliced green onions (including tops)
- vegetable oil cooking spray
- 15 cherry tomatoes, halved
Directions

1Using a food processor or grater, coarsely shred zucchini (you should have about 4 cups). Sprinkle with salt; let stand in a colander for 15 minutes. Squeeze with your hands to press out moisture.
