Zucchini Bread

  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 c. grated raw zucchini
  • 3 tsp. vanilla
  • 3 c. self-rising flour
  • 3 tsp. ground cinnamon
  • 1 c. chopped nuts
  • 1/2 c. raisins

Directions

    Heat oven to 350°.

    Beat eggs until light and foamy.

    Add sugar, oil, zucchini and vanilla and mix lightly and well. Combine flour and cinnamon and add to the egg and zucchini mixture.

    Stir until well blended.

    Add nuts and raisins and pour into three (9 x 5 x 3-inch) loaf pans.

    Bake at 350° for 1 hour. Cool on rack.
