  • 2 c. grated, peeled zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 c. chopped walnuts

Directions

    Beat eggs; add sugar, oil, zucchini and vanilla.

    Mix well. Combine flour, salt, baking soda, baking powder and cinnamon.

    Add to the zucchini and egg mixture.

    Stir in nuts.
