  • 3 eggs
  • 1 c. oil
  • 1 tsp. vanilla
  • 2 c. unpeeled zucchini, packed
  • 3 c. sifted all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 c. chopped nuts

Directions

    Beat eggs until foamy.

    Beat in oil, sugar and vanilla; mix well.

    Beat in zucchini, sifted flour, salt, cinnamon, soda and baking powders.

    Then fold in nuts.

    Bake in two well-greased and floured loaf pans at 350° for about 1 hour.
