Ingredients

  • 3 eggs
  • 1 c. oil
  • 1 1/2 c. sugar
  • 3 medium or 2 c. grated zucchini, well drained
  • 2 tsp. vanilla
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. raisins
  • 1 c. nuts, chopped

    Beat eggs in a large bowl.

    Stir in oil, sugar, zucchini and vanilla.

    Sift all dry ingredients together and stir into egg mixture until well blended.

    Add raisins and nuts, after rolling them in flour to make sure they mix well.

    Pour batter into 2 (8 x 5-inch) loaf pans.

    Bake at 375° for 1 hour or until done.

    When done, remove from oven and allow to cool 10 minutes, then remove from pans.
