Ingredients

  • 3 c. all-purpose flour
  • 1 1/2 tsp. cinnamon
  • 2 1/2 tsp. baking powder
  • 3 eggs
  • 2 c. shredded zucchini
  • 18 oz. crushed pineapple, drained
  • 1 c. oil
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 2 tsp. soda
  • 3/4 c. chopped nuts
  • 3 c. sugar

Directions

    Mix flour, cinnamon, soda, salt, baking powder and nuts; set aside.

    Beat eggs, oil and vanilla in a large bowl until creamy. Add dry ingredients, sugar and pineapple alternately.

    Stir until dry ingredients are mixed.

    Stir in zucchini until moist.

    Pour into 3 well-greased and floured loaf pans; bake at 350° for 1 hour.
