- 1 c. salad oil
- 2 c. sugar
- 2 c. grated, peeled squash
- 2 tsp. vanilla
- 3 c. flour
- 1 tsp. soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 3 tsp. cinnamon
- 1/2 c. nuts
Directions

1Beat eggs until light and foamy.

2Add next 4 ingredients.

3Mix lightly, but well.

4Add to flour mixture and blend.

5Add nuts. Bake in 4 small loaf pans, well greased, for 45 minutes at 325°. Remove from pans immediately and cool.

6Great for freezing.

7Makes 4 small loaves or two 9-inch square pans.
