Zucchini Bread

Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil (light)
  • 3 1/2 c. unsifted flour
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 2 c. grated, unpared zucchini
  • 1 c. chopped walnuts
  • 1 c. raisins
  • 1 1/2 tsp. vanilla extract

Directions

    Beat the eggs, then gradually add in the sugar.

    Beat in oil. Mix together the dry ingredients and add alternately with zucchini to egg mixture.

    Stir in raisins, walnuts and vanilla.

    Bake in 2 greased and floured 9 x 5-inch loaf pans at 350° for 55 minutes. Allow to cool before removing from pans.

    Cool before cutting. May be iced with confectioners sugar and water glaze.
