Ingredients
- 1 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1/3 c. quick cooking rolled oats
- 1 tsp. baking soda
- 1/2 c. butter or margarine
- 1/2 c. sugar
- 2 eggs
- 2 Tbsp. milk
- 1 tsp. vanilla
- 1/2 tsp. lemon juice
- 1 c. finely shredded zucchini
- 1/2 c. chopped walnuts
Directions

1Combine flours, oats and baking soda.

2Set aside.

3In large bowl, beat butter with an electric mixer (medium speed) for 30 seconds.

4Add sugar;

5beat until fluffy.

6Add eggs, milk, vanilla and lemon juice.

7Beat well.

8Stir in zucchini.

9Add flour mixture gradually while beating on low speed until combined.

10Stir in walnuts.

11Spread in greased ring mold or 8 x 4 x 2-inch loaf pan. Bake in 350° oven, 55 to 60 minutes or until a wooden toothpick inserted in center comes out clean.

12Cover with foil the last 10 minutes of baking.

13Cool completely for easy slicing.
