- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 2 c. grated zucchini
- 3 tsp. vanilla
- 3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 3 tsp. cinnamon
- 1 c. walnuts
Directions

1Beat eggs until light and foamy.

2Add sugar, oil, zucchini and vanilla and mix lightly, but well.

3Combine the flour, salt, baking soda, baking powder and cinnamon.

4Add to egg zucchini mixture.

5Stir until well blended.

6Add nuts.

7Pour into lightly greased and floured loaf pans.

8Bake at 350° for about 45 minutes to 1 hour.

9Batter fits 2 (9 x 5) loaf pans, 3 (8 x 3) loaf pans or 7 (5 x 3) mini loaf pans.
