  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 c. grated zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 c. walnuts

    Beat eggs until light and foamy.

    Add sugar, oil, zucchini and vanilla and mix lightly, but well.

    Combine the flour, salt, baking soda, baking powder and cinnamon.

    Add to egg zucchini mixture.

    Stir until well blended.

    Add nuts.

    Pour into lightly greased and floured loaf pans.

    Bake at 350° for about 45 minutes to 1 hour.

    Batter fits 2 (9 x 5) loaf pans, 3 (8 x 3) loaf pans or 7 (5 x 3) mini loaf pans.
