Ingredients

  • 3 c. all-purpose flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 c. chopped nuts
  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. coarsely chopped zucchini
  • 1 (8 oz.) can crushed pineapple, drained

Directions

    Combine first 6 ingredients and set aside.

    Beat eggs; add sugar, oil and vanilla.

    Beat until creamy.

    Stir in zucchini and pineapple.

    Add dry ingredients and stir until moistened.

    Bake in loaf pans (greased and floured) for 1 hour at 350°.

    Makes 2 loaves, 9 x 5 x 3-inches.
