- 3 eggs (or substitute)
- 1 c. applesauce or salad oil
- 2 c. sugar
- 1 tsp. vanilla
- 2 c. coarsely shredded, unpeeled zucchini
- 8 1/2 oz. can crushed pineapple
- 3 c. flour
- 2 tsp. soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
Directions

1Beat eggs.

2Add oil or applesauce, sugar and vanilla.

3Beat until foamy.

4Stir in zucchini; add crushed pineapple.

5Combine remaining ingredients.

6Stir gently until blended.

7Divide into 2 greased and floured 5 x 9-inch bread pans sprayed with Pam.

8Bake at 350° for 1 hour (or until brown on edges).

9Using the substitute eggs and applesauce causes it to get done in about 50 minutes. Cool 10 minutes and turn onto wire rack to cool completely.
