  • 2 c. zucchini
  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 c. flour
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 1 c. walnuts

Directions

    Mix oil and sugar together.

    Add eggs, one at a time, and beat well after each addition.

    Add vanilla. Add sifted dry ingredients alternately with the zucchini. Fold in nuts.

    Pour into a 9 x 13-inch greased and floured pan. Bake at 350° for 55 minutes.
