  • 6 (6-inch) zucchini, sliced thin
  • 3/4 lb. Monterey Jack cheese, grated
  • 1/2 lb. Colby cheese, grated
  • 1 medium onion, diced
  • 5 eggs, beaten
  • 1/4 c. vegetable oil
  • 1 c. Bisquick
  • 1/4 c. parsley, chopped
  • salt and pepper

Directions

    Place cheese, zucchini and onion in a large bowl.

    Mix the remaining ingredients in a separate bowl and add to the zucchini. Blend well.

    Lightly grease an 8 x 11 x 2-inch baking dish.

    Add the mixture and bake at 375° for 45 minutes.
