- 6 (6-inch) zucchini, sliced thin
- 3/4 lb. Monterey Jack cheese, grated
- 1/2 lb. Colby cheese, grated
- 1 medium onion, diced
- 5 eggs, beaten
- 1/4 c. vegetable oil
- 1 c. Bisquick
- 1/4 c. parsley, chopped
- salt and pepper
Directions

1Place cheese, zucchini and onion in a large bowl.

2Mix the remaining ingredients in a separate bowl and add to the zucchini. Blend well.

3Lightly grease an 8 x 11 x 2-inch baking dish.

4Add the mixture and bake at 375° for 45 minutes.
