Ingredients
- 2 lb. zucchini, sliced and lightly steamed
- 1 onion, chopped
- 1 (4 oz.) can chopped chillies (I use 4 to 5 dashes of Tabasco sauce instead)
- 2 eggs, beaten
- 1 can cream of mushroom soup
- 1/2 c. milk
- 1 Tbsp. melted butter
- 1/2 c. rice (Uncle Ben's converted)
- grated cheese
Directions

1Mix together eggs, cream of mushroom soup and milk.

2Stir in rice, chopped onion and chillies.

3Then stir in zucchini.

4Pour into casserole and top with butter and grated cheese.

5Bake, uncovered, at 350° for approximately 1 hour, until lightly browned.
