Zucchini Casserole

Ingredients

  • 2 lb. zucchini, sliced and lightly steamed
  • 1 onion, chopped
  • 1 (4 oz.) can chopped chillies (I use 4 to 5 dashes of Tabasco sauce instead)
  • 2 eggs, beaten
  • 1 can cream of mushroom soup
  • 1/2 c. milk
  • 1 Tbsp. melted butter
  • 1/2 c. rice (Uncle Ben's converted)
  • grated cheese

Directions

    Mix together eggs, cream of mushroom soup and milk.

    Stir in rice, chopped onion and chillies.

    Then stir in zucchini.

    Pour into casserole and top with butter and grated cheese.

    Bake, uncovered, at 350° for approximately 1 hour, until lightly browned.
