- 1 1/2 lb. zucchini, cubed
- 1 can cream of mushroom soup
- 1/2 c. grated Cheddar cheese
- 1/2 c. sour cream
- 1 large grated carrot
- 1 medium onion, chopped fine
- 1 small bag Pepperidge Farm herb stuffing mix (use less)
- 1 stick margarine or butter, melted
- pepper to taste
Directions

1Cook zucchini about 5 minutes.

2Drain well.

3Add soup, grated cheese (reserve some for topping), carrot, onion, sour cream and spices.

4Add melted butter to stuffing mix.

5In a 9 x 12-inch pan, layer the zucchini mixture and stuffing mixture, ending with the stuffing mixture.

6Put remaining cheese on top.

7Bake uncovered for 30 minutes in a 350° oven.
