Zucchini Casserole

  • 1 1/2 lb. zucchini, cubed
  • 1 can cream of mushroom soup
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. sour cream
  • 1 large grated carrot
  • 1 medium onion, chopped fine
  • 1 small bag Pepperidge Farm herb stuffing mix (use less)
  • 1 stick margarine or butter, melted
  • pepper to taste

Directions

    Cook zucchini about 5 minutes.

    Drain well.

    Add soup, grated cheese (reserve some for topping), carrot, onion, sour cream and spices.

    Add melted butter to stuffing mix.

    In a 9 x 12-inch pan, layer the zucchini mixture and stuffing mixture, ending with the stuffing mixture.

    Put remaining cheese on top.

    Bake uncovered for 30 minutes in a 350° oven.
