Ingredients

  • 2 pkg. chicken flavored Stove Top stuffing mix
  • 1/4 c. melted margarine
  • 1 large zucchini (5 c. when cooked), chopped (not peeled)
  • 1 large onion, diced
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1/4 c. grated carrot

Directions

    Prepare stuffing per package directions.

    Stir in margarine. Place 1/2 on bottom of 9 x 13-inch pan.

    Boil zucchini with onion. Drain well.

    Add soup, sour cream and carrot.

    Place zucchini mixture on top of stuffing.

    Top with remaining stuffing mixture. Bake at 350° for 30 minutes.

    Serves 10.
