- 1 1/2 lb. zucchini squash
- 4 oz. grated sharp cheese
- 1 small onion, chopped
- 1 tsp. oregano
- salt and pepper to taste
- 1/2 c. cheese
- thin bread crumbs
- 2 tomatoes, peeled and chopped
Directions

1Do not peel squash.

2Wash and slice thin.

3Steam 5 minutes. Drain.

4Mix squash, tomatoes, onion, salt, pepper, oregano and half of cheese.

5Place in 1 1/2-quart casserole sprayed with Pam.

6Top with remainder of cheese and thin bread crumbs.

7Bake covered in a 350° oven for 30 minutes.

8Yields 2 servings.
