  • 2 c. self-rising corn meal
  • 1/4 c. self-rising flour
  • 1/4 c. sugar
  • 1 c. cottage cheese
  • 3 eggs
  • 1 1/2 Tbsp. melted butter or margarine
  • 1 1/2 c. grated zucchini

    Beat all together.

    Bake in greased large iron skillet or any other appropriate baking pan at 350° to 400° for 40 to 45 minutes. Don't have the skillet hot like for regular corn bread, just warm enough to grease.
