- 3 zucchini, quartered and sliced
- 1/2 c. chopped onions
- 1/2 c. evaporated milk
- 3 egg whites
- 1 (8 1/2 oz.) pkg. corn muffin mix
- 3 oz. Cheddar cheese, shredded
Directions

1Preheat oven to 375°.

2Saute zucchini and onions until golden brown and tender.

3In large bowl, beat together egg white and milk.

4Stir in muffin mix and blend until smooth.

5Fold in zucchini and onions with 1/2 of the cheese.

6Pour into 9-inch pie plate sprayed with nonstick spray.

7Bake 30 minutes until golden brown.

8Melt remaining cheese on top.

9Cool.

10Serve with Olive Spread.
