  • 5 c. peeled, sliced zucchini
  • 3/4 c. water
  • 1/2 c. sugar
  • 1/4 c. lemon juice
  • 1 tsp. cinnamon
  • 1 c. brown sugar
  • 1 c. flour
  • 1 tsp. baking powder
  • 6 Tbsp. butter or oleo

Directions

    Combine zucchini, water, sugar, lemon juice and cinnamon; boil 10 minutes.

    Put in a 9-inch pie tin or 8 x 8-inch cake pan. Combine brown sugar, flour, baking powder and butter or oleo.

    Put on top of mixture in pan.

    Bake at 350° for 30 minutes.
