Banana Citrus Cake With Orange Syrup

- 185 g butter
- 1 cup caster sugar
- 4 eggs
- 2 cups self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 3 medium bananas
- 2 tablespoons lemon juice
- 1/4 cup orange juice
- for the orange syrup
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup strained orange juice
Directions

1Cream butter and sugar in small bowl with electric mixer until light anf fluffy.

2Add eggs one at a time, beating well after each addition.

3Process or blend bananas, lemon and orange juices until smooth and liquified.

4Stir sifted flour and soda and banana mixture into creamed mixture.

5Pour into well greased lightly floured loaf tin.

6Bake in moderate oven for about 40 minutes.

7Stand for 5 minutes.

8Invert tin onto a wire rack, stand for a further 10 minutes before removing from the tin.

9For the syrup, combine sugar, water and orange juice in a pan, bring to the boil and pour it onto the cake whilst hot.
