- 3 eggs
- 1 c. oil
- 2 c. sugar
- 2 c. shredded zucchini
- 2 tsp. vanilla
- 3 c. flour
- 2 tsp. salt
- 2 tsp. baking soda
- 1/2 c. chopped nuts
- 1 c. chocolate chips
Directions

1Beat eggs until frothy.

2Add oil, sugar, zucchini and vanilla. Add dry ingredients.

3Fill paper baking cups 1/2 to 2/3 full with batter.

4Sprinkle top of batter with sugar and cinnamon.

5Top each with 3 or 4 chocolate chips.

6Bake in a 375° oven for 20 minutes. No need to frost.

7These also freeze well.
