- 8 c. peeled, seeded and sliced zucchini, cut into slices to resemble apples
- 3/4 c. sugar
- 1/3 c. lemon juice
- 1 tsp. cinnamon
Directions

1Cook until zucchini is transparent and sugar is melted and syrupy.

2Dissolve 2 tablespoons cornstarch in small amount of water; add to zucchini mixture to thicken.
