- 4 medium to large zucchini, sliced 1/2-inch thick
- salt to taste
- 1 egg
- 1/2 c. sour cream
- 1/4 tsp. seasoned salt
- 1/4 tsp. pepper
- 1 c. grated Parmesan cheese
- 2 Tbsp. butter or oleo
Directions

1Cook zucchini, covered, in salted, boiling water until tender. Drain very well.

2Put in shallow baking dish.

3Beat together the egg, sour cream, salt, pepper and half of the cheese.

4Pour over zucchini.

5Dot with butter and sprinkle with remaining cheese. Bake at 400° for 15 minutes.

6Serves 4 generously.
