Zucchini Custard

  • 4 medium to large zucchini, sliced 1/2-inch thick
  • salt to taste
  • 1 egg
  • 1/2 c. sour cream
  • 1/4 tsp. seasoned salt
  • 1/4 tsp. pepper
  • 1 c. grated Parmesan cheese
  • 2 Tbsp. butter or oleo

Directions

    Cook zucchini, covered, in salted, boiling water until tender. Drain very well.

    Put in shallow baking dish.

    Beat together the egg, sour cream, salt, pepper and half of the cheese.

    Pour over zucchini.

    Dot with butter and sprinkle with remaining cheese. Bake at 400° for 15 minutes.

    Serves 4 generously.
