Zucchini Dressing Casserole

Ingredients

  • 2 lb. zucchini
  • 1/4 c. onion
  • 1/2 lb. sausage
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1 c. grated carrot
  • 8 oz. pkg. seasoned stuffing mix (4 c.)
  • 1/2 c. melted margarine
  • 1 c. grated cheese (1/2 Mozzarella and 1/2 Cheddar)

Directions

    Cook zucchini and onion in salted water for 5 minutes; drain. Brown sausage and drain.

    Combine sour cream, soup, zucchini and carrots.

    Add margarine to dressing.

    Layer 1/2 of dressing in bottom of 9 x 13-inch pan or 1 1/2-quart casserole.

    Pour vegetables over and sprinkle sausage on.

    Add remaining dressing and bake at 350° for 30 minutes.

    Sprinkle top with 1 cup grated cheese; return to oven to melt.
