Zucchini Egg Mini Muffins

- 2 zucchini
- 2 eggs
- 1/4 cup finely diced onion
- 1/2 cup shredded cheese
- 1/2 cup breadcrumbs
- 1/4 teaspoon black pepper
Directions

1Preheat Oven to 350 Degrees. Spray mini muffin tin with non-stick cooking spray.

2Grate Zucchini into clean dish towel or layered paper towels. Ring out as much water as you can.

3In a medium sized mixing bowl beat (2) eggs. Add zucchini, onion, cheese, bread crumbs and black pepper. Mix well.

4Distribute mixture evenly between the 24 muffin tin cups.

5Bake 18-22 minutes or until browned/done.

6Remove from oven and cool slightly. Transfer muffins to wire cooling rack.
