Zucchini-Garlic Pasta

  • 1 lb. fancy shaped pasta
  • 1/2 lb. diced bacon
  • 1 medium chopped onion
  • 4-6 minced garlic cloves
  • 2 to 3 medium zucchini (about 1-1/2 lb.) halved and sliced
  • 1/2 tsp salt
  • 3 Tbsp lemon juice
  • 1/4 cup grated Romano or Parmesan cheese

Directions

    Cook pasta according to package directions.

    Meanwhile, in large skillet over medium heat, cook bacon until crisp.

    Remove with slotted spoon and set aside; discard all but 2 Tbsp of drippings.

    Saute onion and garlic in drippings until tender, about 3 minutes.

    Add zucchini and salt; cook until tender, about 6 minutes.

    Add pasta to zucchini mixture.

    Add lemon juice and bacon; toss.

    Transfer to serving bowl and sprinkle with cheese. Yield: 6-8 servings.
