Ingredients
- 1 c. milk
- 1 oz. soft bread (no crust)
- 1/4 c. olive oil
- 2 eggs
- 1/4 c. grated Parmesan cheese
- salt and pepper to taste
- 1 lb. zucchini, sliced coin thin
- 1/3 c. long grain rice, parboiled 15 minutes, rinsed and drained
Directions

1Pour 1/2 cup of milk over bread and soak several minutes.

2Add 2 tablespoons of olive oil, eggs, 1/2 cup grated cheese, salt and pepper.

3Mash and stir with a fork until a batter consistency.

4Add zucchini and rice.

5Mix well and pour into oiled gratin dish. Press evenly all over and smooth surface with tines of fork.

6Pour over the remaining milk, should barely cover surface.

7Sprinkle with remaining cheese and dribble thread of olive oil over entire surface.

8Bake at 375° to 400° for 1 hour.
