  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1/2 pound zucchini, cubed
  • 1/2 pound yellow squash, cubed
  • 1/2 red onion, diced
  • 1/4 cup chives, cut into 1/2-inch pieces
  • Salt and freshly ground pepper

    In a large skillet, heat oil and butter over high heat.

    Add zucchini, squash and onion.

    Cook until softened and golden, about 10 minutes.
