Ingredients
- 3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. soda
- 1 Tbsp. cinnamon
- 1 c. chopped nuts
- 2 c. zucchini, shredded
- 2 eggs, slightly beaten
- 1 1/2 c. sugar
- 3/4 c. honey
- 1 c. oil
- 2 tsp. vanilla
Directions

1Combine flour, salt, soda, baking powder and cinnamon. Stir in nuts.

2Combine zucchini and rest of the ingredients.

3Add to flour mixture stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 4x5 loaf pans.

4Bake at 350° for about 1 hour or until toothpick inserted in center comes out clean. Cool in pans 10 minutes.

5Remove from pans and let cool on wire racks.
