Zucchini Lasagna

- 1/2 lb. hamburger or sausage
- 1/3 c. onion
- 1 jar sauce
- zucchini
- flour
- 1 egg
- 15 oz. Ricotta cheese
- 16 oz. Mozzarella
Directions

1Brown meat and onion; drain fat.

2Add sauce.

3Bring to boil. Reduce heat and simmer 5 to 10 minutes.

4Slice zucchini into 1/2-inch slices.

5Dredge in flour.

6Arrange single layer of zucchini in bottom of lasagna pan.

7Combine egg and Ricotta. Spread over zucchini.

8Top with half of meat sauce and half of Mozzarella.

9Repeat with another of dredged zucchini, meat sauce and Mozzarella.

10Bake at 375° for about one hour, until zucchini is tender.

11Let stand for 10 to 15 minutes prior to serving.
