- 1 c. oil
- 3 c. zucchini
- 3 c. flour
- 2 tsp. baking powder
- 3 Tbsp. cinnamon
- 1/2 tsp. baking soda
- 2 tsp. vanilla
- 1/2 tsp. almond extract
Directions

1Beat first 3 ingredients well.

2Add zucchini, mix.

3Mix all dry ingredients together and add to mixture and mix.

4Add vanilla and extract.

5Bake at 350° for 20 to 25 minutes in muffin tins.
