- 5 large zucchini, sliced
- Louis Abate's spaghetti sauce
- 1 onion, thinly sliced
- 3 eggs, beaten
- 2 c. bread crumbs
- oil for frying
- Parmesan/Romano cheese
- 2 c. shredded Mozzarella cheese
Directions

1Dip a slice of zucchini in egg, then bread crumbs.

2Continue until all the zucchini is breaded.

3Heat oil in a large frying pan and fry the zucchini until golden brown.

4Remove from oil and drain on paper towels.

5In a baking dish, layer with spaghetti sauce, zucchini, onion and cheeses.

6Bake in a 350° oven for 30 minutes or until hot and bubbly.
