Ingredients

  • 4 quarts zucchini chunks
  • 6 onions, sliced
  • 2 green peppers, sliced
  • 2 cloves garlic or 1/2 tsp. garlic salt
  • 5 c. sugar
  • 1 1/2 tsp. turmeric
  • 2 Tbsp. mustard seed
  • 6 c. cider vinegar
  • 1/4 c. chili peppers, use 1/4 liquid (optional)
  • 1/3 c. salt

Directions

    Do not peel zucchini, wash and cut and remove seeds.

    Add onion, pepper, garlic and salt.

    Cover with cracked ice.

    Mix and stand 3 hours.

    Drain.

    Combine vinegar, spices, sugar, chilies and liquid.

    Heat to boil.

    Add zucchini and reheat to boil.

    Lower heat and simmer briefly.

    Process.
