Ingredients
- 4 quarts zucchini chunks
- 6 onions, sliced
- 2 green peppers, sliced
- 2 cloves garlic or 1/2 tsp. garlic salt
- 5 c. sugar
- 1 1/2 tsp. turmeric
- 2 Tbsp. mustard seed
- 6 c. cider vinegar
- 1/4 c. chili peppers, use 1/4 liquid (optional)
- 1/3 c. salt
Directions

1Do not peel zucchini, wash and cut and remove seeds.

2Add onion, pepper, garlic and salt.

3Cover with cracked ice.

4Mix and stand 3 hours.

5Drain.

6Combine vinegar, spices, sugar, chilies and liquid.

7Heat to boil.

8Add zucchini and reheat to boil.

9Lower heat and simmer briefly.

10Process.
-
11Makes 10 pints plus.
