  • 3 c. sliced zucchini (with skin)
  • 1 small onion, chopped
  • 1 c. Bisquick
  • 4 eggs
  • 1/2 c. vegetable oil
  • 1/2 c. grated cheese
  • 2 Tbsp. fresh parsley, chopped
  • salt and pepper to taste

Directions

    Beat eggs well in large mixing bowl.

    Add all other ingredients except zucchini and mix well.

    Fold in zucchini and mix until well coated.

    Put mixture in greased pie plate or quiche dish.

    Bake in 350° oven 1 hour.
