Ingredients

  • 6 c. zucchini
  • 1 c. sugar
  • 1 1/2 Tbsp. flour
  • 1 1/2 tsp. cream of tartar
  • 1 1/2 tsp. cinnamon
  • dash of salt
  • dash of nutmeg
  • 1 tsp. lemon juice
  • dough for double crust pie

Directions

    Peel zucchini; slice lengthwise.

    Remove seeds.

    Slice as you would slice apples.

    Add small amount of water; bring to a boil. Simmer until tender; drain well and cool.

    Add remaining ingredients; place in an unbaked 9-inch pie crust.

    Cover with top crust; flute edges to seal.

    Cut slits in top crust for steam to escape.

    Bake in preheated 400° oven for 40 to 50 minutes. (Tastes like apple pie.)
