Zucchini Pie

  • 4 to 6 small zucchini
  • 6 eggs
  • 1 c. mild Cheddar cheese, grated
  • 1 tsp. dill weed
  • 1 roll Pillsbury crescent dinner rolls
  • salt and pepper to taste

Directions

    Wash and slice zucchini into 1/4-inch rounds.

    In a large skillet, saute the zucchini in butter or margarine, dill weed, salt and pepper until done but still a bit crunchy (about 5 to 7 minutes).

    Into a 9-inch pie plate, put out dinner rolls to form a crust.

    Pour cooked zucchini into pie plate. Beat eggs and pour over zucchini.

    Sprinkle grated cheese over zucchini-egg mixture. Bake in a 325° oven for 30 to 45 minutes. Crust will be golden and egg mixture solid.

    Test with toothpick to be sure eggs are cooked. Slice and enjoy.
