  • 6 c. zucchini, sliced or shredded
  • 1 1/4 c. sugar
  • 1 1/2 tsp. cream of tartar
  • 1 1/2 Tbsp. flour
  • 1 1/2 tsp. cinnamon
  • dash of salt
  • dash of nutmeg

Directions

    Cook zucchini in a little water until it boils.

    Let simmer until tender.

    It will shrink down to 2 cups.

    Drain well.

    Cool. Add rest of ingredients.

    Put in pie crust.

    Add top crust. Sprinkle with cinnamon and sugar.

    Bake at 400° for 10 minutes. Reduce heat to 325° for 40 minutes or until done.
