Zucchini Pie

Ingredients

  • 2 c. peeled zucchini squash, cooked, drained and mashed
  • 1 c. canned milk
  • 2 eggs, separated
  • 2 Tbsp. cornstarch
  • 2 Tbsp. oleo
  • 1 tsp. vanilla, lemon or banana flavoring (depends on one you like best)
  • 2/3 c. sugar

Directions

    Mix milk, cornstarch and eggs until slightly thickened, then add mashed squash.

    Remove from heat and add flavoring and oleo. Bake pie shell and pour in baked shell.

    Beat egg whites until stiff.

    Put on pie and brown.
