- 4 c. sliced zucchini
- 1 medium onion, chopped
- 4 Tbsp. margarine
- 2 eggs, beaten
- 2 c. Mozzarella, shredded
- 1 (8 count) tube crescent rolls
- 2 tsp. Dijon mustard
- 2 Tbsp. parsley
- scant 1/2 tsp. oregano
- 1 tsp. basil
- 1 tsp. pepper
Directions

1Melt margarine in large skillet and saute zucchini and onion until tender. Remove from heat.

2Mix together eggs and cheese, then add spices.

3Line 10-inch pie plate with rolls to make crust and spread with mustard.

4Mix zucchini and onion with egg mixture; pour into pie plate.

5Bake 25 minutes at 350°.

6Serve warm.
