  • 3 c. refrigerated loose-pack hash brown potatoes
  • 1 beaten egg
  • 1/4 c. chopped onion
  • 1/4 c. grated Parmesan cheese
  • 2 medium zucchini, sliced thin
  • 1 clove garlic, minced
  • 1 Tbsp. margarine or butter
  • 3 beaten eggs
  • 3/4 c. shredded Swiss cheese
  • 1/2 c. milk
  • 2 tsp. fresh oregano or 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

    In large bowl, combine 1 egg, onion and Parmesan cheese.

    Stir in potatoes.

    Pat mixture into a 9-inch pie plate or a 10-inch quiche dish.

    Bake, uncovered, in a 400° oven for 35 to 40 minutes until golden.

    Cool slightly; reduce oven to 350°.

    In large skillet cook zucchini in garlic and butter until just tender. Cool and arrange on crust.

    In mixing bowl combine remaining 3 eggs, cheese, milk, oregano, salt and pepper.

    Pour over zucchini.

    Bake at 350° for 25 to 30 minutes.
