Zucchini Pineapple

  • 16 c. peeled, seeded and shredded zucchini
  • 1 1/2 c. lemon juice (be sure to use commercial to get sufficient acid)
  • 46 oz. unsweetened pineapple juice
  • 1 3/4 c. very mild flavored honey

Directions

    Combine all ingredients in an 8-quart pot.

    Bring to boil. Lower heat and simmer for 20 minutes, stirring often.

    Strain the pulp and divide evenly between hot quart jars.

    Pour in liquid evenly between jars.

    Use all the liquid even though pulp may seem loosely packed; leave 1/2-inch headspace.

    Process for 30 minutes in boiling water bath.
