- 1 gal. plus 1 c. coarsely grated zucchini
- 2 to 3 tsp. pineapple extract
- 3 c. sugar
- 1 (46 oz.) can pineapple juice
- 1/2 c. lemon juice
Directions

1Peel zucchini; grate.

2Mix everything together real well. Bring to a boil for 5 minutes.

3Put zucchini mixture in jars. Cold pack 15 minutes.

4Makes approximately 4 quarts.
