Zucchini Pineapple

  • 1 gal. plus 1 c. coarsely grated zucchini
  • 2 to 3 tsp. pineapple extract
  • 3 c. sugar
  • 1 (46 oz.) can pineapple juice
  • 1/2 c. lemon juice

Directions

    Peel zucchini; grate.

    Mix everything together real well. Bring to a boil for 5 minutes.

    Put zucchini mixture in jars. Cold pack 15 minutes.

    Makes approximately 4 quarts.
