Zucchini Pineapple Cake

  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. cooking oil
  • 2 c. zucchini, grated
  • 3 c. flour
  • 1 tsp. baking powder
  • 1/2 c. raisins
  • 1 tsp. salt
  • 1/2 c. nuts, chopped
  • 1 c. crushed pineapple, drained

Directions

    Beat eggs until fluffy.

    Add sugar, vanilla, oil and zucchini. Blend well.

    Add dry ingredients.

    Mix well.

    Stir in pineapple, raisins and nuts.

    Bake in 2 well-greased and floured loaf pans. Bake at 325° for 1 hour or until done when tested with a toothpick.
