- 3 eggs
- 2 c. sugar
- 2 tsp. vanilla
- 1 c. cooking oil
- 2 c. zucchini, grated
- 3 c. flour
- 1 tsp. baking powder
- 1/2 c. raisins
- 1 tsp. salt
- 1/2 c. nuts, chopped
- 1 c. crushed pineapple, drained
Directions

1Beat eggs until fluffy.

2Add sugar, vanilla, oil and zucchini. Blend well.

3Add dry ingredients.

4Mix well.

5Stir in pineapple, raisins and nuts.

6Bake in 2 well-greased and floured loaf pans. Bake at 325° for 1 hour or until done when tested with a toothpick.

7Cool in pans on wire rack.
